Established in 1688, we have been making and selling hampen and kamaboko at the same location for over 300 years.
Hampen dates from the Edo period. The main ingredient is shark meat pounded into a paste, to which is added a type of yam (yamaimo) and egg whites. This mixture is formed into white cakes that look somewhat like bars of soap, but have a consistency more like marshmallows. And like marshmallows, hampen is tasty when roasted over an open flame, and it is also a popular addition to oden.
Kamaboko is made in a similar manner, but sardines, cod and various other fish are used instead of shark. The cakes are often half-cylinder shapes, and the consistency is more rubber-like and perfectly enjoyable to chew. Kamaboko is great sliced and dipped in soy sauce.
Both hampen and kamaboko were luxury foods in the Edo and Meiji periods, and common people had little opportunity to taste them. We have been privileged to deliver our kamaboko to the Imperial Household on the occasion of the coronations of the Meiji, Taisho and Showa Emperors.
